Holiday Sweet Potato Pecan Pie


Who says you can't gobble up your favorite Thanksgiving dishes and keep it vegan? Introducing our "Vegan Sweet Potato Pecan Pie, a mash-up of classic flavors and plant-based deliciousness. This Thanksgiving, it's time to give thanks for the abundance of compassionate choices we have. Our Vegan Sweet Potato Pecan Pie not only embodies the heartwarming flavors of tradition but also celebrates a kinder and more inclusive way of feasting. 


Ingredients:


For the Pie Crust:

- 1 1/2 cups all-purpose flour

- 1/2 cup vegan butter, cold and cubed

- 1/4 cup ice water

- 1/2 tsp salt


For the Filling:

- 2 cups cooked and mashed sweet potatoes

- 1/2 cup full-fat coconut milk

- 1/2 cup maple syrup

- 1/4 cup brown sugar

- 2 tsp cinnamon

- 1/2 tsp nutmeg

- 1/4 tsp salt


For the Pecan Topping:

- 1 cup chopped pecans

- 1/4 cup brown sugar

- 2 tbsp maple syrup

- 2 tbsp vegan butter, melted


Instructions:

1. Start with the pie crust. In a food processor, combine the flour and salt. Add the cold, cubed vegan butter and pulse until the mixture resembles coarse crumbs. While pulsing, gradually add ice water until the dough comes together. Form the dough into a disc, wrap in plastic, and refrigerate for 30 minutes.


2. Preheat your oven to 350°F (175°C).


3. Roll out the chilled pie crust on a floured surface and transfer it to a 9-inch pie dish. Crimp the edges decoratively.


4. In a mixing bowl, combine the mashed sweet potatoes, coconut milk, maple syrup, brown sugar, cinnamon, nutmeg, and salt. Mix until smooth.


5. Pour the sweet potato filling into the pie crust and spread it evenly.


6. For the pecan topping, mix the chopped pecans, brown sugar, maple syrup, and melted vegan butter in a small bowl. Sprinkle this mixture over the sweet potato filling.


7. Bake for 45-50 minutes, or until the filling is set and the pecans are golden brown.


8. Allow your Vegan Sweet Potato Pecan Pie to cool before slicing and serving.
